Q1Deck oven or rack oven?

If the crust is the point, hearth breads, baguettes, anything baked on stone, you want a deck. If volume on pans is the point, you want a rack. Plenty of bakeries run one of each.

Q2What will it cost?

No sticker prices here. These machines cross an ocean, and prices move with currency, freight, and timing. Your quote states the number, itemized, for the week you are buying, within one business day.

Q3How long until it is baking?

It depends on the machine and the month. Some of these ovens are in South San Francisco now; some cross the ocean to order. The date comes with your quote.

Q4Who installs it?

TMB’s own crew, led by an installation manager seventeen years in. Delivery, rigging, and connection are part of the job.
