Wet dough's real enemy is the rounding — that is where it clings and tears. The Konik rounders take an optional hot-and-cold air system built for exactly that, so sticky doughs come off the cone round instead of ruined. For the dividing itself, hydration changes which press and which disc — describe the dough to the counter and the answer comes back matched to it, not guessed.
