02 · Three stories
A sourdough room stays humid and acidic all year. The standard build is stainless inside and out on insulated cam-lock panels. Where moisture is low, Galvalume is available.
Retarding slows fermentation. Proofing speeds it up. The same box does either, or both. Your dough holds overnight and is ready when you are.
TMB designs the system to your rack count and your floor plan, with TMB-built controls and diffusers. You describe the room. The box is built to it.
