The batch

Tip in up to 20 kg. Run one operation. Take out 10 or 20 equal pieces. The biggest bowl of the morning stops being the bottleneck.

The pressure

Pressure regulation is built for stiff, low-hydration doughs. Bagel and pretzel dough presses clean. The grid accessory takes the same batch down to small pieces.

THE HEX

The HEX

With the HEX device it cuts hexagons. That is the shape behind stamped breads, rosetta, and soffiata.
