The air

Add the hot-and-cold air system and high-hydration pieces ride the cone and release clean. Wet dough stops deciding your equipment.

Each piece rides the rotating cone along a concave channel and comes off round. No pressure, no degassing.

The cleaning

The flour duster lifts out. The Teflon channels wipe down. It is ready for tomorrow in minutes.
