The high-capacity workhorse — lifts and bakes a rack of 30 or more sheet pans, baguette trays, or strap loaf pans, or two single racks of the same. The latest in baking technology: air flow management, steam generation, and thermal exchange in a 300-series stainless body, with US-made, UL and CSA approved burners.

Thirty-plus pans per load with the same 85% thermal factor heat exchanger and high-capacity steam as the XL1 — pulse steam for roasting, timed intermittent for baking, recovery quick enough to keep the morning moving.
The cam lifter takes 1,200 lbs, raising the rack as the door closes — no motors, no clutches, and carrier options that fit the racks already on your floor.
XL2-G ovens are in stock and ready to ship with short lead time — and three-piece modular construction with standard utility connections keeps the install measured in days, not seasons.
