TMB Baking · Rotating rack
The workhorse of rack ovens — lifts and bakes a rack of 15 or more sheet pans, baguette trays, or strap loaf pans, or two single racks of the same. Combines air flow management, steam generation, and thermal exchange in a 300-series stainless body, with US-made, UL and CSA approved Midco burners.

Quick recovery and high steam generation cut the wait and the excess heat-up between loads, while the counter-flow heat exchanger's 85% thermal factor turns fuel into crust instead of exhaust.
Roll the rack in; the cam lifter raises it as the door closes and sets it down as the door opens — 1,200 lbs capacity with no lifting motors or clutch devices to maintain. Carrier options fit many rack styles.
57 inches wide by 47 deep, three-piece modular construction, and standard utility connections — serious rack capacity in the footprint of a walk-in door.
