THE COUCHE

The couche

Each tray is lined with French couche, the same cloth as a baker’s bench. Wet dough releases clean and breathes while it proofs.

THE DEPOSIT

The deposit

The trays put baguettes and ciabatta on your loader belt gently and fast. The proof you built survives the trip to the oven.

THE SIZE

The size

TMB sources cabinets for any loader and any oven depth. SASA cabinets, TMB-built cabinets, or open racks for longer trays. Tell us your line and the size follows.
