The dough

A fork mixer runs at lower speed with less friction than a spiral. Wet, high-hydration doughs stay cooler and keep their structure through the mix.

The bowl

You choose a fixed or removable bowl, in stainless steel or aluminum. A removable bowl lets you rest dough and keep mixing. A fixed bowl takes less floor space.

THE RANGE

The range

VMI makes artisan and industrial versions. The artisan version fits a retail bakery. The industrial version fits wholesale volume. You tell us your batch size and we quote the right one.
