The Bassanina Tubix – TMB Baking Stoneheart version offers the overall performance and features of a TMB Baking TAG Gas Deck Oven, but requires less bakery space and lower budget. TMB Baking installs these ovens with the same mechanicals as built at the factory, but with TMB Baking-supplied, ETL Certified Control System and US-made, UL Listed Burner, thus the “Stoneheart” version.
The Bassanina Tubix – TMB Baking Stoneheart Model offers the overall performance and features of a TMB Baking TAG Gas Deck Oven, but requires less bakery space and a lower budget. TMB Baking installs these ovens with the mechanicals as built at the Italian factory, but with TMB Baking-supplied, ETL Certified Control System and US-made, UL Listed Burner, thus the Stoneheart model designation. The oven features:
- Four baking decks, each with 2 or 3 doors per baking chamber
- Baking chamber door/window width of 600mm (23.6”)
- Hearth stone depths from 1600mm (63”) to 2400mm (94.5”), covering the gamut of baking capacity requirements for retail and wholesale bakeries
- Vapor tube diameter of 27mm, which is the standard European size dimension
- Either a single steam generator for each deck (located in the base of the oven), or two steam generators per deck (located on either side of the baking chamber). The later provides instant and evenly distributed steam to each door once loaded with dough, but does require a wider footprint
- Masonry and concrete construction in the base, with concrete placed in the walls of the oven for increased heat retention (energy savings) and more thermal mass for quicker recovery than all-steel oven construction
- Ample use of high-temperature insulation for zero-clearance rating on sides and back of oven (though some clearance is required to construct the oven)
