SASA
An autocouche or automatic proofing tray with accompanying cabinet that allows for gentle handling and quick and efficient depositing of baguettes and wetter dough, such as ciabatta, onto loader belts. The French couche used in these trays resists adhesion of the dough and also provides for maximum aeration of the dough during proofing. TMB Baking offers a variety of sizes to match up with the bakery's loader and the ovens that it serves.
