A proofer-retarder-system is designed for the purpose of controlling fermentation in your bakery. TMB Baking R-P systems can be configured to accommodate anything from one single rack to hundreds of double racks or every option in-between. Whether retarding (slowing down) or proofing (speeding up) fermentation, the TMB Baking system is designed to serve the baker’s needs.
TMB Baking Proofer-retarder units offer the following features to your requested custom box:
- From one single rack to hundreds of double racks or any option in-between, TMB Baking can supply the configuration you need.
- 3 ½” insulted cam-lock stainless steel wall and ceiling panels, with reinforced, diamond-plate base doors.
- Standard box is stainless steel, inside and out, for longevity in humid and corrosive (sourdoughs) environments.
- Galvalume© box avaiable for walk-ins and retarders in low-moisture environments.
Electrical
- 208-220V/60HZ/1 or 3-ph, neutral & ground (depending on con-densing unit used) or
- 480V units, available on request
- Separate connection for light 120v, neutral & ground.
- Amperage based on each equipment configuration
- Water (tap) ¼” – ½” incoming. ½” – ¾” condensate.
- Floor drain or floor trench for condensate
Refrigeration
- Refrigeration connections between diffusers and condensing unit(s). Requires a pump-down system.
*All electrical, plumbing & refrigeration connections should be made according to local codes by licensed contractors.
